Sharpening Stone
What is the best type sharpening stone?

Oil Stones
Water Stones
Ceramic Stones
Diamond Stones

Which is the best for use on Global knives (Ikasu Knife Block Set)?

Thanks!
I also have an I.O.Shen Mastergrade Chef's Knife.

NEVER ever purchase a sharpener where you have to drag your knife through a device to sharpen it. Each knife has a different and specific angle at which to sharpen it, and those things are just too broad. Best thing to buy for your money, to protect your investment, would be a dual sided ceramic stone. Ceramic is harder than the steel and is also sharpens your knife delicately not so rough. I would start with a 1000-4000 combination wet stone. This should suit your needs. Start on the 1000 grit side which is coarser then on to the 4000 grit for the finishing touches. You can search for this product through google, there you can also research sharpening techniques. Doing this will prolong the life of your knife and make it more safe also. You are more likely to cut your self on a dull knife than with a sharp knife. Hope all this helps.
